Cat6 handles gigabit comfortably and 10 gigabit over short distances, and it is sufficient for most office drops. Cat6a supports 10 gigabit across the full run length and is worth the added cost for backbone runs, wireless access points you expect to upgrade, and anywhere you do not want to pull cable again in five years.
